I made granola yesterday for class and served it with hemp milk. There was a request for this recipe:
6 cups thick cut oats
1/2 cup to cup of good quality maple syrup
1 T cinnamon or a mixture of your favorite spices up to 2 T will do
Optional add ins of raisins, chocolate chips, sunflower seeds, nuts, unsweetened coconut etc.
Mix oats, sweetener and spices in large bowl. Spread in single layer onto a sheet pan/cookie sheet. Cook for up to 30 minutes in a 350 degree oven. Please check at 20 minutes to ensure there is no burning.
Remove from oven and allow to cool to enable the oats to develop a crunch. At this point, toss in anything you would like to add to the granola.
Our food drive for Sligo is on-going. Rachel dropped her first delivery of items to the school and principal Wilson was over-joyed. Items needed are:
Non-perishable milk cartons
Fruit packed in water or juice
